Microorganisms are having a large surfaceto-volume ratio and produce a variety of surface-active agents (biosurfactants) that adsorb to and alter the conditions prevailing at interfaces. Biosurfactants are the structurally and chemically diverse group of surface-active molecules synthesized by wide group of microorganisms. Surfactants concentrate at interfaces because they are amphipathic, and are divided into low molecular weight molecules that efficiently reduce surface and interfacial tensions and high molecular weight polymers that bind tightly to surfaces.
